Reduce heat to low and add lentils; cover and simmer for 15-20 minutes until the lentils are tender. Drain any remaining liquid and set a side to cool.,,Chop the following vegetables very fine: onion cucumber tomatoes and cilantro. Add to the salad bowl.,,Season the fresh veggie with lemon juice Zatar Sumac salt black pepper and olive oil. Mix well. Fattoush Salad

Fattoush is salad made up of vegetables and pieces of toasted pita bread and is a part of Syrian and Lebanese cuisine.

Yield: 4 servings

Ingredients:

2 cups water
½ cup lentils
¼ red onion chopped fine
4 boiled eggs chopped
1 cucumber chopped fine
3 Roma tomatoes chopped fine
3 tablespoons fresh cilantro chopped fine
Juice of 1 ½ lemons
3 teaspoons Zatar
3 teaspoons Sumac ground
1 teaspoon salt
½ teaspoon black pepper
2 teaspoons olive oil
Toasted pita bread
